Pale straw in color with a crisp citrus nose … On the mid palate the wine displays nice citrus/lime notes along with some nice minerality. On the medium length finish the wine’s crisp acidity and citrus linger a bit … this isn’t as strong or vibrant a flavor as some Assyrtiko’s likely because in the LCBO description it says ” 20% of this wine was fermented in new oak” which would soften it. For the 2021 vintage, about 20% of this wine was fermented in new oak while the remainder was cold-fermented in stainless steel. It’s energetic and intense, with lifted floral, peach and tropical notes. A refreshing, satisfying sipper, it will also be wonderful with fish or a roasted-tomato soup. Drink now to 2024+.
